Fabulous Aubergine Parmigiana!

The aubergine parmigiana is the queen of unique dishes! A dish shared and disputed as origins from north to south Italy, with some different ingredients and methods of composition, but all absolutely fabulous! Few ingredients, but a lot of flavor for a dish that symbolizes Mediterranean dishes: tomato, aubergine, basil and cheese. Soft and Fragrant Apple Cake


The apples have always been the undisputed protagonists of homemade desserts, just like apple cake. 
A classic dessert of Italian cuisine, soft, light, fragrant and easy to make, excellent to enjoy especially in winter.

People: 8 people


Ingredients: 

  • Apples 700 g
  • Eggs 3
  • Butter 70 g
  • Flour 00 350 g
  • Sugar 250 g
  • Milk 200 ml
  • Lemon 1
  • Baking powder 1 (16 g)
Preparation:

First of all, to make the apple cake, peel and cut the apples into a slices, and put them to macerate with lemon juice to prevent them from becoming dark.


At this point carefully separate the yolks from the whites; whip the yolks with the sugar until a light and frothy cream is obtained. Leave the whites aside. 

Add to the dough of the yolks the flour, the melted butter and the milk. Mix well with a spatula from bottom to top to prevent the mixture from being taken apart; then add the yeast and the grated lemon zest and mix well with the dough.

Once this is done, whisk the whites until stiff, and then gently incorporate them into the dough. Do this by mixing them from bottom to top, gently and little by little.
Finally add the apples to the dough (leave some aside do that you can decorate the surface of the cake), then pour the mixture into a cake tin of about 24 cm in diameter, buttered and floured. 

Cover the cake with slices of apple and few pieces of butter. 


Now you can bake the cake in the preheated oven for 40-50 minutes at 180°C. 
Let the apple cake cool before serving!

Storage: 

Keep the apple cake at room temperature, preferably covered, for 2-3 days at most. It is possible to freeze it once cooked.
